A keystroke is the definition of something that's typed on your keyboard; Every time you type any key on your keyboard you're sending a keystroke to whatever you're typing on.

If you're referring to the onscreen keyboard which you click your mouse to choose keys, then yeah, keyloggers can't archive information off of it.

my antivirus - kaspersky.. has a built in encrypted onscreen keyboard..  i normally use it for my poker accounts/bank accounts

It doesn't help if they have a trojan on your system and can see anything anyway (which is what those guys who hacked me tried had).
